What you'll need:
-400 grams of soft tofu
-¾ cups of raw cashews
-1 medium purple onion, diced
-170 grams of spinach, stems removed and rinsed
- ¼ cup of nutritional yeast
-2 teaspoons of apple cider vinegar
-1 tablespoon of avocado oil
-2 teaspoons of garlic, minced
-Salt, black pepper, paprika, cayenne pepper to taste
How to create:
Add the tofu, cashews, nutritional yeast, vinegar, and 1/4 teaspoon of salt in a blender and puree until it reaches a pudding-like consistency.
Chop the rinsed spinach into small pieces.
Heat avocado oil in a medium pan and add onions, garlic, and all of the spices. Saute for 5-6 minutes or until the onions turn golden brown. Then, toss the spinach into the pan and cook until wilted- about 1-3 minutes.
Turn the heat to low and add the tofu/cashew puree to the pan. Add additional salt, black pepper, paprika, and cayenne pepper to taste. Stir constantly until dip is heated. Serve and enjoy immediately!
